Tabbouleh



1 cup bulgur, soak in …



1-1/3 c. boiling water about 15-20 minutes until it is "chewy"




Mix dressing:

1/2 t. salt

1/2 t. dried mint

1/4 c. olive oil

1/4 c. lemon juice

2 cloves garlic, crushed


Pour dressing over bulgur and marinate 2-3 hrs.




Add vegetables:

2 large carrots, shredded

1/2 c. chopped parsley

1 or 2 tomatoes, chopped

1/2 med. red onion, chopped

1 chopped green pepper

1 cucumber

1/2 lb. chopped jicama

Before serving:

Calamata olives, coarsely chopped
