Great for potlucks!
Drain and combine:
2 cans Black Beans (15 oz each)
2 cans corn kernels (11 oz each)
Finely chop and add:
2 small jalapeno chilies, stemmed and seeded
Dice and add:
1 large red pepper
1 large onion
1 cup firmly packed cilantro
Combine and stir in:
¼ cup lime juice
1/8 cup red wine vinegar
1 t. oregano
1/3 t. chili powder
½ t. cumin
½ t. salt
freshly ground pepper
Cover and chill 2 hours or up until next day. Pour into a bowl and garnish with tomato slices.
