Rince the sweet potatoes and bake in the owne for about 50-60 minutes until soft.
Meanwhile, peel the ½ onion and cut into small pieces. Fry in butter or olive oil until soft. Cut the feta into small pieces and put in a serving dish. Mince and add the parsley and the garlic, add the olive oil (you may need to add a bit more) and the onion. Mix well.
Taste with paprika powder and salt.
Rince the ruccola if needed. Cut the cucumber into small cubes. Mix them. (Add oil and vinegar if you like.)
When the sweet potatoes are done, put one on each plate. Cut a long hole on the top and spread some feta mixture in this hole. Put some salad around the sweet potato.
