Ingredients
Peel and chop the carrots coursely. Put them in a wide casserole and add the cardamom seeds, half of the nuts and the saffron. Add the milk and sugar and bring to a boil. Let simmer gently until the liquide has evaporated. This may take up to 45 minutes.
Put the ghee in a frying pan and add the carrot mixture. Let fry 15-20 minutes while stirring occasionaly until the mixture has thickened.
Add 1/4 of the nuts and fry for a few minutes more.
Put in a serving dish and garnish with the rest of the nuts.
