Fresh Coconut Chutney

  • 1-1˝ dl (˝-3/4 cup) water
  • 1 dl (a scant ˝ cup) grated coconut
  • ˝-1 tsp seedless tamarind
  • a bunch of fresh coriander leaves

    Spices

  • ˝ dl (1/4 cup) unsweetened peanuts (jordnötter cacahučtes)
  • A little oil for frying. Ghee (clarified butter) is best
  • 1 tsp chana dal
  • Red chilli. It should be quite spicy!
  • ˝ tsp salt

    First put 1 dl water in a small serving dish and add the coconut and the tamarind. Now dry-rost the peanuts in a small frying pan until they give off a strong flavor. Grind them and put them directly into the serving dish.

    Put the oil in the same frying pan and add the chana dal and chilli. Rost it until it gives off a strong smell. Grind and put into the same serving dish.

    Add the salt and stir and let sit for at least an hour. You will most likely need to add more water.

    Garnish with the fresh coriander leaves.
