Add the egg mixture to the brown sugar mixture.
Sift: 1-1/2 c. unbleached flour
1/2 c. whole wheat flour
1/3 t. salt
1 t. baking soda
Stir the flour mixture into the sugar/egg
mixture.
Stir the drained, grated zucchini into
the mixture.
Stir in: 1 c. seedless raisins
1 c. shredded unsweetened coconut
1-1/2 c. granola
(chocolate chips optional ..
rich .. consider decreasing sugar)
Spread into two 7-1/2" x 3-1/2"
buttered baking pans (or lasagna pan .. so that mixture is
about an inch or more deep).
Bake at 350o F. for 40 minutes. Cool before cutting.
